Mini omelette muffins

Ingredients:

  • 3 eggs

  • Splash of milk or roughly 2 tbs

  • Two small sweet bell peppers

  • 1/4 cup of spinach

  • 5 mushrooms (I used shiitake)

  • 1/2 a shallot

  • Salt and pepper

  • Optional: shredded mix cheese, oil, butter, cupcake liners




Steps:

  1. Pre heat oven to 350*F and begin greasing or lining your mini muffin tins w canola oil spray or butter or cupcake liners

  2. Dice your veggies! Your mushrooms, peppers, onions, and spinach. Set aside.

  3. Crack three eggs in to a separate bowl, add salt and pepper and a splash of milk to the eggs and whisk until well combined.

  4. Pour your egg mixture into each mini muffin tin well about 1/3 full

  5. Sprinkle even amounts of every veggie into each well and briefly mix

  6. Optional sprinkle some shredded cheese on top

  7. Place in oven for 15-20 min, allow to cook for 10 min and serve!
