Mini omelette muffins

Ingredients:
3 eggs
Splash of milk or roughly 2 tbs
Two small sweet bell peppers
1/4 cup of spinach
5 mushrooms (I used shiitake)
1/2 a shallot
Salt and pepper
Optional: shredded mix cheese, oil, butter, cupcake liners

Steps:
Pre heat oven to 350*F and begin greasing or lining your mini muffin tins w canola oil spray or butter or cupcake liners
Dice your veggies! Your mushrooms, peppers, onions, and spinach. Set aside.
Crack three eggs in to a separate bowl, add salt and pepper and a splash of milk to the eggs and whisk until well combined.
Pour your egg mixture into each mini muffin tin well about 1/3 full
Sprinkle even amounts of every veggie into each well and briefly mix
Optional sprinkle some shredded cheese on top
Place in oven for 15-20 min, allow to cook for 10 min and serve!
