Loaded garlic baked potato

A fairly basic recipe with a little bit of spice ✨

Ingredients:
5 russet potatoes
~ 1tbs olive oil to massage into each potato (so 5tbs in this case)
Pinch of salt for each potato
1/2 cup sour cream
2.5 tbs butter
Splash of milk or 1tbs
1 tsp of minced garlic
1 tsp Dried parsley
a dash or 1/4 tsp Truffle powder
1/2 tsp Italian seasoning
1/2 tsp pepper
1 tbs Garlic powder
1/2 tsp Paprika
1/8 cup Minced bacon bits
3 stalks of green onions
1/4 cup Mexican shredded cheese

Steps:
Preheat oven to 400*F and prep a wire rack on top of a cookie sheet to catch any oils
Wash your potatoes well and start poking holes into each with a fork
Massage olive oil and salt on to the exterior of the potatoes and place on wired rack. Bake for an hour
Prep your bowl, put your butter, milk, seasonings, sour cream and set aside
Let potatoes cool for about 5-10min so they don’t burn your hands. BUT LEAVE THE OVEN ON. Carefully slice off the top of the potato and dig a well through the potato to make like a skin boat. Put the potato mash into the prepped bowl. Do this for each potato then place back on to wire rack
Mash your potatoes with the mixture it should be smooth like icing. From here continue to taste and add seasoning until you are content
Load up the skins w the mash. I filled each about half way and used the back of my spoon to make a well. From here add some cheese and bacon bits and fill the top with more mash.
Sprinkle more cheese on top and bake back into oven at 400*F for 5 min.
Remove from oven and sprinkle some paprika, bacon bits, and sliced green onions to top it off
Serve and enjoy! If u have extra potato skin u can always air fry them to make some quick chips to munch on
