Buffalo cauliflower bites

The juiciest air fried cauliflower bites with home made ranch sauce.

Ingredients:
Buffalo sauce:
- 1 cup Frank Red Hot Sauce
- 1.5 tbs white vinegar
- 0.5 cup/ 1 stick of melted butter (unsalted)
- 1/4 tsp cayenne pepper
- 1 tbs garlic powder
- 1 tsp Worcestershire sauce
Cauliflower batter:
- 1 head of cauliflower enough for roughly 4 cups
- 3/4 cup all-purpose flour
- 3/4 cup milk
Ranch sauce:
- 1/4 cup mayonnaise
- 1/4 cup buttermilk
- 1/4 cup sour cream
- pinch of salt and pepper to liking
- 3/4 tsp dill weed
- 1/2 tsp dried parsley, garlic powder, and chives
- 1/4 onion powder
- 1-3 tsp of lemon juice

Tip:
Don't be afraid to taste your sauces! For me I need a perfect balance of flavors but others may desire a more vinegar sour tasting buffalo or ranch sauce.
Here’s how to do it:
Buffalo sauce:
- Melt butter for roughly 10 seconds in microwave until liquid.
- Mix in all the liquid ingredients such as the hot sauce, vinegar, and Worcestershire sauce until well combined
- Next mix in the cayenne pepper and garlic powder
- Taste sauce to make sure it is spicy enough or sour enough
Cauliflower:
- Chop cauliflower head to 'chicken nuggie' bite size pieces
- Mix milk and all purpose flour to create a thick batter to coat the cauliflower
- Air fry at 350*f for 10 min. flip and reapply sauce every 2- 3min
Ranch sauce:
- In a separate dish combine the mayo, buttermilk, sour cream, lemon juice, and seasonings and mix until it basically tastes like ranch you buy from the store.. (I added more dill and garlic powder)
Plating: just like any other wing place dont be afraid of your famous veggies, celery and carrots on the side.
