Cuddle Weather Meal

Two types of grilled cheese paired with a herb tomato soup.



Ingredients:

grilled cheese #1:

❥ 2 slices of white or wheat bread

❥ 1 tbs butter

❥ 2 slices of ”Kraft” American cheese or can do 1 slice swiss and 1 slice mozzarella


grilled cheese #2:

❥ 1 baguette or French bread

❥ butter

❥ Brie cheese

❥ Choice of jam (I used cranberry)

❥ Arugula


tomato soup:

❥ 1 can crushed tomatoes

❥ 1 cup chicken or vegetable stock (can use boullion)

❥ 1/2 cup heavy cream

❥ 2 pinches Salt and pepper

❥ 3 tsp onion power

❥ 1 tsp granulated sugar

❥ 3 tsp garlic powder

❥ 1/4 tsp crushed red pepper

❥ 1/4 tsp dried oregano


optional:

❥ sprigs of basil for soup garnish

❥ red or green grapes for plating

❥ Apples or pears for plating

Steps:

grilled cheese #1:

❥ Prep pan to medium low heat and add butter. ❥ Once butter is melted place two sliced bread on pan, while that’s toasting..

❥ place two slices of Kraft cheese on to one slice of bread then top off sandwich.


Toast bread to liking, may need to flip a few times.


grilled cheese #2:

❥ Slice baguette or french bread to about 1 inch thickness. Prep cookie sheet with foil.

❥ Brush on butter or oil to slices of bread. cut up about 1/2 inch wedge of Brie cheese and place on bread. Toast for about 8 min depending on oven or toaster.

we’re looking for golden toast with a perfect gooey melted cheese.


❥ Once toasted add a few sprigs of arugula or jam or even both!


tomato soup:

❥ In a sauce pan warm up stock on medium heat until a slight boil. In the mean time prep seasonings in a separate bowl or add directly to stock.

❥ once boiling add the one can of tomatoes and let simmer for 5 min while constantly stirring.


If you have a soup blender tool feel free to use this during this step if not, add everything from sauce pan into a blender and blend on low until soupy. ❥ Add heavy cream to mixture and continue to stir or blend until creamy. ❥ Plate and serve, add basil for garish and enjoy!
