Beef and tofu enoki mushrooms

Box of Firm or silky tofu
1/2 lb thinly sliced beef
1/2 white onion
Enoki mushrooms 1/4 cup soy sauce
1/4 cup water
1 tsp sesame oil
1tbs of mirin
2-3 tbsp honey or sugar
Salt and pepper
1/4cup Soy sauce
1-2 cloves of minced garlic
2 eggs
Green onions
Dash of dashi
Side of rice

Prep:
Cut off the roots of your enoki and rinse well we don’t want any dirt
Cut up your green (garnish) and white onions (thin slices)
Grab a few stocks and roll it in to the thinly sliced beef as seen below
Open, drain, and dry your tofu, cut to desired size
In a separate bowl add your water, sesame oil, honey or sugar, salt, pepper, and dash of dashi powder this is your sauce
In another bowl beat your two eggs until it’s a silky liquid

Cooking part:
On a hot oiled skilled (use whatever oil you like) fry your onions
Once the onions are slightly brown place your beef rolls on top
Add your sauce and tofu
Simmer until it’s fully cooked
Then add your best eggs on top don’t move anything let the eggs cook for 3min. This acts as a binder for the sauce
Serve over rice and garnish with green onions
