Ingredients:
5 whole/large eggs
1/8 cup mayonnaise
1/2 tbs dijon mustard or yellow whichever is on hand
pinch salt and pepper
pinch of white granulated sugar
pinch dried dill
pinch smoked paprika
optional: chives (i forgot to use it in the photo lol)
Steps:
boil some water enough to make sure all the eggs get covered by water and once you start to see small bubbles forming drop your eggs in the pot with a spoon for assistance we don't want cracked eggs. Boil your eggs for about 15-20 in on high then get a bowl of ice water to freeze shock them to stop the cooking process.
let eggs cool and peel them by hand or for me I reuse the pot of water they came from and put a small lid on top and shake it up for 3 min. The eggshells will separate on their own with a little water in the pot.
get a separate bowl and knife, start cutting your eggs in halves and push out the hard yolk gently into the separate bowl and lay our your egg whites accordingly to your platting preferences.
now to your egg yolks add your mayo, mustard, salt and pepper, and sugar to the mix. you can be fancy and put this mixture into a piping bag with a five-petal tip but for me, I just put it in the wells with a spoon since ppl eat it anyways. I also don't recommend using a piping bag until you really finely mashed your yolks since it gets clogged easily and it's annoying to cleanout.
for the toppings, it's up to you but I definitely recommend adding the dill and smoked paprika it gives it bonus flavors. sprinkle it on generously until you achieve your desired look. Serve and enjoy :)
